Started by two brothers making untaxed whiskey just outside of town and selling it to the local town’s people, decide that after their product became in high demand and years of dodging the local tax collector and law they would move the operation into town. They purchased an old warehouse and converted it into a distillery. The building design presented some unique challenges for the distilling process. They decided the east wing would be the drying kilns on the first floor and the grain and water storage on the second floor where they would also produce the mash. The first floor of the southwestern section of the west wing was turned into the distilling area where the mash is fermented, distilled and condensed into the whiskey. The remainder of the first floor of the west wing was setup for shipping and deliveries. The second floor of the west wing is the whiskey storage and bottling area.
They decided early on that the building was too small for the furnaces to be on the main floor so had them built in the unused basement. A unique design but one that has worked for the operation quite well to date.
Business expanded and the brother decided to purchase the three outer buildings around the distillery. The building to the north was a pub and still is but is now own by the brothers as a showcase for their product. The building to the northeast is now the shipping and delivers area for ground transportation. The building to the south was a small smithy and the brother bought the business and hired the smithy to repair things as needed and produce barrels for the whiskey storage.
